Volpi: Usage Tips

When it is not possible to mill immediately after harvesting the olives, it is necessary to take some precautions:

• Olives should not be piled up to avoid fermentation processes;
• Olives should be stored un-defoliated in crates with a maximum capacity of 20-25 kg;
• The environment must be dry and well-ventilated;
• Olives should not be stored for more than two days.
